How proud am I of my cousin David for smoking blocks of cream cheese! And for his sister Leah for telling me about it! The one on the left is covered in a homemade mix of: paprika, chili powder, cayenne, garlic powder and black pepper. The one on the right is sprinkled with a ready-made blend from Urban Accents, containing; salt, brown sugar, garlic, onion, paprika, thyme, coriander, ancho chiles, chipotle chile, parsley, cloves and allspice. The cream cheese blocks were seasoned, and then put on the smoker, using applewood, for two hours. This was served on crackers with fig jam and with smoked salmon, prepared in a similar way. This would be great on bagel chips or fresh bagels as well.

You can't see them, but under my bagel shop on a shelf, are four wheels. They were attached by my husband after I had this portable store idea. My store is more march than food, but my four-year-old loves restocking the shop with the real bagels!
There are so many places on wheels to buy bagels, including from a bicycle in New York. And as I formally begin this journey of book publishing, I like to think of the forward momentum of all of these bagels on wheels, and the literal road we are traveling down.
